Homemade Butter Cookie Recipe! Very fluffy and tasty!

These cookies first started as an attempt to make mojito cookies, but ended up being a delicious butter cookie! So delicious that they didn't even last a week in the house! The best part is they are fairly simple to make and take little ingredients! Most of the ingredients in the cookie are ones you have already in the cabinet. Frosting is also not needed has the cookies have a great taste on their own!


These cookies use shortening instead of unsalted butter. I know what you're thinking, "A butter cookie without butter?!" Yes! And I can explain! It produces a softer cookie when used as the fat base. But don't just get any shortening! This is a must: GET BUTTER FLAVOR SHORTENING!


The rest of the ingredients are fairly simple. Flour, sugars, egg, salt, baking powder and vanilla extract. Though we do have brown sugar to add a bit more moisture.



Homemade Butter Cookies

Ingredients:

½ cup shortening (MUST BE BUTTER FLAVOR)

¼ cup white sugar

¼ cup light brown sugar

1 egg

¼ tsp salt

1 tsp of baking powder

1 cup of flour

¼ tsp of vanilla extract


Instructions:

  1. Cream together the shortening and sugars. (White and Brown sugar). You should mix it until it’s smooth.

  2. While it’s mixing, add the dry ingredients in a separate bowl and whisk to combine. (Salt, baking powder and flour)

  3. Add the egg and vanilla extract to the shortening mixture. Mix until fully combined, you should see no egg left. Make sure to scrape the sides of the bowl to ensure it is fully combined.

  4. Add half of the dry ingredients into the shortening mixture. Stop when you see little to no dry, add the other half. Mix until fully combined, dough may appear thick. That is okay!

  5. Preheat your oven to 375° and prepare a baking sheet for your cookies. Simply add a sheet of parchment paper and you’re ready to go!

  6. Use a medium cookie scoop (if you don’t have one, that’s fine! Just make sure to keep an eye on your cookies so they don’t overbake. Try to split the dough between 12 cookies) to scoop around 12 cookies on your baking sheet.

  7. Once the oven is finished preheating, bake the cookies for 10 minutes. Let them sit for a few minutes then try one! If you decide they need a little more time, pop them back in for another minute or two.

  8. Sit back and enjoy! You don’t have to frosting them like I did, they’re great without it!

TIP: If your oven is like mine and bakes unevenly, you can flip the baking tray at 5 minutes! That way both sides will get baked the same way!
